Soak a rice vermicelli or bean thread noodles in hot water for up to 30 minutes, depending on the package instructions. When they’re fully soaked and ready to use, rinse them with cold water.
Toss the noodles with soy sauce, fish sauce, ginger, honey, garlic, and sesame oil. Top those with your favorite raw vegetables and a protein of your choice. Chilled rotisserie chicken is one option. You could also use cooked shrimp or edamame beans.
Chicken Salad
You can make a chicken salad with ease after purchasing a rotisserie chicken. Remove the meat and cut or tear it into small pieces. Add in mayonnaise, chopped onion and celery, a fruit like chopped apples, grapes, or dried cranberries, a nut like pecans or almonds, and fresh herbs. Mix it and add more mayonnaise if needed.
A large batch of the chicken salad can be stored in the fridge for several days. Use it on top of a garden salad or make sandwiches with it. If you have any frozen cooked pasta or grains, thaw those and mix some of the chicken salad into the grains for a hearty grain or pasta salad.
Watermelon Salad
Watermelon is packed with water, so it helps with hydration. Chop cubes of watermelon and toss it with lemon juice, yellow cherry tomatoes, feta cheese, and hazelnuts. This salad is a refreshing side dish for sandwiches.
Finger Sandwiches
Heat can affect your appetite. If you haven’t been very hungry, fill the fridge with finger sandwiches. You choose the fillings. Some of the more classic ideas are cucumber sandwiches made with herbed cream cheese and thin slices of cucumber. Tuna and ham salad are other options, but vegetable sandwiches will last longer in the fridge.
